Welsh rarebit (caws pobi): the nutrition model

The café and its manager are invented. The nutrition figures are typical values for UK foods, rounded. Real products vary, so a real café would use the values on its own packets.

1. The brief

Caffi’r Bont is a community café in Rhondda Cynon Taf. The manager, Siân, wants to add Welsh rarebit to the lunch menu. She wants to show customers the nutrition of one portion, and she wants to offer a lighter version too. She has started a spreadsheet, but she thinks something is wrong with it.

2. The recipe: 4 portions

Method: melt the butter in a pan, stir in the flour and cook for 1 minute to make a roux. Gradually stir in the milk to make a thick sauce. Take it off the heat and stir in the cheese and mustard. Toast the bread, spread the cheese mixture on top and grill until bubbling and golden.

The mustard is left out of the model. It is 5 g out of 465 g and changes the totals very little.

5. Reference intakes and front-of-pack colours

Reference intakes for an average adult, per day: energy 2000 kcal, saturates 20 g, salt 6 g. There is no reference intake for fibre on labels: adults should aim for 30 g of fibre a day, and 11 to 16 year olds for 25 g.
